Ingredients:
For the Fried Chicken:
4 chicken thighs or breasts (thinly sliced)
1 cup buttermilk
1 tsp paprika
1/2 tsp garlic powder
1/2 tsp cayenne pepper
1 tsp salt
1 cup all-purpose flour
1/2 cup cornstarch
Vegetable oil for frying

1 cup shredded cheddar cheese
1/2 cup milk
1 tbsp butter
1 tbsp all-purpose flour

For the Burger Assembly:
2 brioche buns
4 slices cheddar cheese
1 tbsp melted butter
Instructions:
Marinate the Chicken:
In a bowl, mix buttermilk with paprika, garlic powder, cayenne pepper, and salt.
Add chicken and marinate for at least 1 hour (overnight preferred).
Prepare the Coating:
In another bowl, mix flour and cornstarch with a pinch of salt.
Remove chicken from the buttermilk and coat each piece in the flour mixture.
Fry the Chicken:
Heat vegetable oil in a deep skillet to 350Β°F (175Β°C).
Fry chicken pieces until golden and crispy, about 6β8 minutes. Drain on a wire rack.
Make the Cheese Sauce:
Melt butter in a saucepan, then whisk in the flour and cook for 1 minute.
Gradually add milk, stirring until smooth.
Add shredded cheddar cheese and a pinch of salt. Stir until melted and creamy.
Assemble the Burger:
Toast the brioche buns lightly with melted butter.
Spread a layer of cheese sauce on the bottom bun.
Add a fried chicken piece, then a slice of cheddar cheese.
Layer another fried chicken piece, another slice of cheddar, and drizzle with cheese sauce.
