For the Chicken:
4 chicken thighs or breasts (boneless)
1 cup buttermilk
1 tsp paprika
1 tsp garlic powder
Salt & pepper to taste
1 cup all-purpose flour
1/2 cup cornstarch
Oil for frying
For the Cheese Sauce:
1 cup shredded cheddar cheese
1/2 cup heavy cream
1/4 tsp paprika
1/4 tsp garlic powder
Pinch of salt
For the Toppings:
4 brioche buns
Lettuce leaves
Mayonnaise (optional)
Chopped chives
For the Fries:
4 medium potatoes (cut into fries)

Instructions
Step 1: Prepare the Chicken
Marinate chicken in buttermilk, paprika, garlic powder, salt, and pepper. Let it sit for at least 30 minutes or overnight.
In a separate bowl, mix flour, cornstarch, paprika, and a pinch of salt.
Remove chicken from marinade and coat each piece thoroughly in the flour mixture.
Heat oil in a deep skillet and fry chicken until golden brown and crispy (about 5-7 minutes per side). Drain on paper towels.
Step 2: Make the Cheese Sauce
Heat heavy cream in a small saucepan over medium heat.
Add shredded cheddar cheese, paprika, garlic powder, and salt. Stir until melted and smooth.
Keep warm for drizzling.
Step 3: Toast the Buns
Spread butter on brioche buns and toast them in a skillet until golden brown.
Step 4: Prepare the Fries
Heat oil in a deep fryer or skillet.
Fry potato strips until crispy and golden brown. Sprinkle with salt.
Step 5: Assemble the Burgers
Spread a layer of mayo (optional) on the bottom bun.
Place a piece of crispy chicken on the bun.

Add lettuce and sprinkle with chopped chives.
